Wine Profile
Tasting Notes
The 2015 offering is similar in style and varietal composition to our last vintage with the exception of no Picpoul Blanc this year. This has produced a wine that is broad on the palate, yet still keeps a vibrant acidity on the finish. The aromatics are dominated by citrus leaf and lemon custard coupled with notes of white flowers, fresh herbs, sweet spices, and hazelnuts.
Winemaker's Notes
We start out with several lots, some co-fermented, while most varietals are kept separate. We ferment in a combination of stainless steel barrels and French oak (mostly neutral). The wine rests on its gross lees until being blended together at bottling after 9 months in barrel. The resulting wine has been unfined and unfiltered, thus it is common for some sediment to settle to the bottom of the bottle.
