Tasting Notes
The 2012 red blend has aromatics of fresh red fruits like strawberry, raspberry, and dark cherry. It is complemented with notes of sweet spices like clove, nutmeg, and vanilla, coupled by subtle notes of forest floor, dried herbs, and pipe tobacco. The palate is medium bodied with a touch of minerality and fresh acidity on the finish.
Winemaker's Notes
This blend is a departure from previous vintages in that we’ve added a larger percentage of Grenache (55%) and its cousin Counoise (15%). This is helped balance the Syrah and Mourvedre that is much more structured in 2012. After 3-5 days of cold soaking at 55 degrees, the tanks are allowed to warm up and fermentation kicks in spontaneously. The wine spends 22 months undisturbed in French oak prior to being bottled unfined and unfiltered with minimal sulfur added.
