Tasting Notes
2012 is the first year that we produced this Estate Cuvee and we are delighted about the results. The wine is made predominately with the age-worthy Roussanne grape, along with the aromatic Grenache Blanc and Viognier varietals. The wine has a medium bodied mouth-feel and a long, cleansing finish. Its flavor profile is dominated by stone fruit and citrus aromas coupled with notes of white flowers, holiday spice and hazelnut notes.
Winemaker's Notes
We start out with several lots, some co-fermented, while most varietals are kept separate. We ferment in a combination of stainless steel barrels and French oak (mostly neutral). The wine rests on its gross lees until being blended together at bottling after 20 months in barrel. The resulting wine has been unfined, unfiltered, and unstabilized, thus it is common for some sediment and even some tartrates (crystals) to occur at the bottom if the wine is chilled below 40 degrees.
